Quiche Recipes with a Tutorial

I love making quiche and it's really simple to make. I forget this though and we will go for months and months without eating it as I don't keep half and half on hand and you really need the half and half...

Anyway, I made quiche for Christmas Eve and then also for an end of the year breakfast party with my running friends.  It was a hit and people were asking for the recipe, so I thought I'd share!



I made a tutorial for it. (of course I did..)

The Hashbrown crust is based of Paula Deen's recipe, but I have tweaked it a little. She uses more butter and less hashbrown. No surprise. I'm thinking that for the next quiche I'm going to try to make the crust without any butter at all. I don't think it needs it.  I'll let you know how it turns out.



If you don't want to do the hashbrown crust, just purchase either a store bought crust in the pie plate, or you can get the crust that you put in your own plate. I really like Pillsbury's pie crusts, so I get those and roll into my deep dish pie plate!

(The hashbrown quiche will take longer to make as you bake the hashbrowns first (30 min) and then the filling (30 min). But the pie crust quiche is a quick 30 minute meal.)

Mashed Potatoes... the easy way!


Mashed Potatoes. Yummy.

But no time to wash, cut and cook potatoes!

So, I bought cubed hashbrown potatoes and had mashed potatoes in a flash.

Maybe you all knew to do this.

But in case you didn't. Now you do!!

A Big Breakfast for just 4 points!

I wish I had taken a picture... but I didn't and I already ate it. :) After running this morning I was STARVING!!

I had a bagel with cinnamon cream cheese, eggs and bacon!! All for just 4 points!

How... well here you go:

1. Sara Lee mini bagel. Perfect size in my book. 2 points!!

2. 1 wedge Laughing Cow Cinnamon Cream cheese spread. YUM!! Just know that it's not sweet, it's cinamonny. 1 point.
3. Egg Beaters 1/2 a cup. 1 point.

4. 1 slice of fully cooked bacon. FREE!!

I make my eggs in the microwave with the one slice of bacon torn up and cooked with the egg. Doing this makes the bacon taste all through the egg and it feels like a lot more bacon!!

So, if you are like me and need some low point yet hearty meals, here is a great one for you!!

Carrot Fries? I don't know.

I'm on the hunt for vegetables that can replace fries. It's not easy.

I saw a recipe on Weight Watchers  (or maybe Hungry Girl) for carrot fries. So, I made them.

Now, let me be honest.. I don't like cooked carrots. But, I thought I'd try. You never know.

Preparing the carrots took longer than they should as the girls, including my niece were starving from swimming and needed a snack.  So they chomped on some raw carrots.


We started with large carrots, washed and peeled them. 

Then as directed, I cut them into strips, put some coarse salt on them and baked at 425 (I think..) for a while. 

To be honest, I wasn't impressed. But my family liked them. This was all that was left. 

I think next time, I am going to use a mandolin and cut them into paper thin rounds and bake them like that and make carrot chips.  I think they would crisp better.

Maddie Makes Her Favorite Casserole for Dinner!

Maddie made her favorite casserole the other night for dinner. She did a great job and and dinner was rather tasty! The recipe follows.  If I already gave it to you.. sorry. 



Maddie's Favorite Recipe
  1. Brown 1 pound ground meat.
  2. Layer a bag of uncooked egg noodles in bottom of a casserole pan.
  3. Spread the cooked and drained meat on top of noodles.
  4. Open up 2 cans of navy beans, 2 cans of black-eyed peas and 2 cans of corn and pour them on the casserole.  DO NOT DRAIN!!
  5. Use about a 1/2 can of water and pour over top of casserole.
  6. Cover with foil, place on a pan to catch any bubbling and cook at 350 degrees for one hour.
  7. Enjoy.  Doug and I use salsa on top!
All my girls eat this better than most any other meal we make!

An Awesome Homemade Fabric Softener

Recently Doug and I went and stayed with some friends and I just couldn’t get over how soft their towels were.  Finally I mentioned it and she told me that it was her homemade fabric softener.

So later, I emailed her and got the recipe.  I made it and the results are wonderful!

I did go check the internet to make sure that it wasn’t a family secret that I was giving away and found a number of variations.

Here is my recipe..

The ingredients:

3 c. hair conditioner – get the cheap dollar store kind
3 c. white vinegar
6 c. tap water
Put in large empty bottle.  Shake well.

The Results:

And that’s it.

My recycled vinegar bottle works great to store my homemade softener.

Banana No-Nut Muffins

Tonight while most of America watched the National Championship College Football game.. I baked. Sad.

I had 4 bananas that needed to be used, so I made some Banana No-Nut Muffins.  I’ve never been fond of Banana Nut Bread and the like… but I really like Banana bread.  Take a look at these yummy muffins!

Yep, we sampled.  Maddie asked if I wanted to split one with her and who can resist a fresh from the oven baked good??? And more importantly, why? :)muffin2muffin3 

Here is the recipe.  I started with one from a church cookbook and have adapted it to fit our taste buds.

Banana No-Nut Bread

1 3/4  c. flour
1 1/4 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
1/3 c. shortening
2/3 c. sugar
2 eggs
1 1/2 c bananas (I used 4)

Mix/sift together flour, baking powder, baking soda and salt. Cream shortening and sugar; add eggs and mix until smooth. Stir in flour mixture and bananas. Pour into 6 large greased muffin tins and bake at 350 degrees for about 25 minutes (convection oven).
